The formula

grams = tablespoons x 14.787 mL x grams per mL of the ingredient

The grams per mL come from the weight of a full cup (236.6 mL) in USDA FoodData Central or King Arthur Baking's chart. For baking powder, baking soda, yeast, cinnamon and kosher salt the sources only print a spoon weight, so that weight is used directly. Where a source prints both, they agree closely: USDA lists table salt at 18 g a tablespoon and 292 g a cup, and 292 g a cup works out to 18.3 g a tablespoon.

Level spoons

All the weights assume a level spoon: filled, then scraped flat with a knife. A heaped spoon of flour or sugar can hold well over the level amount, and recipes that say "heaped" or "rounded" mean more than a level spoon. When a recipe gives a spoon measure for something strong, such as salt, baking soda or yeast, level it.

Salt is three different ingredients

Table salt, Diamond Crystal kosher salt and Morton kosher salt have very different crystals. King Arthur's chart puts a tablespoon at 18 g, 8 g and 16 g. A recipe written with Diamond Crystal and made with table salt gets more than twice the salt. When a recipe names a brand of kosher salt, pick the matching entry.

How many grams are in a teaspoon?

A third of the tablespoon figure: about 4.1 g of granulated sugar, 6.1 g of table salt, 4.6 g of baking powder or baking soda, 4 g of active dry yeast and 2.6 g of ground cinnamon.
